| Since pulling back the Iron Curtain the area of Tokáji in Hungary has experienced a renaissance. The great Tokáji Aszú was the world's first great sweet wine. These wines are a blend of three indigenous grapes: Furmint, Hárslevelü, and Muskat de Lunel. The Furmint, being the most susceptible to Botrytis Cinerea (Noble Rot), is balanced by intense acidity, which gives the wines their longevity. The wines of Tokáji speak of quince, dried fig, caramelized orange, and honey. They make a delicious pairing with a wide range of foods, from Foie gras to cheese, but reach their greatest heights with dessert. It has been said that Tokáji is "The wine of Kings and the King of wines." |
